What Oil to Use When

Oil, when it’s overheated deteriorates chemically. The rate of the breakdown (and formation of toxic compounds) is dependent on the type of oil and temperature. Overheating the wrong oil creates oxidative stress in the body which pre-ages you and increases your chances of disease. Saturated oils are strong and stable with the ability to withstand heat. Monounsaturated fats are more fragile and polyunsaturated are extremely fragile and should be kept in the refrifgerator. Here is how I use my oils:
